Foodborne viruses remain one of the most persistent blind spots in food safety. Norovirus, Hepatitis A virus and Hepatitis E virus continue to cause outbreaks worldwide, often linked to berries, leafy greens, bivalves, and frozen products. Unlike bacteria, viruses cannot grow in food and survive standard processing steps, making them extremely difficult to control.

Routine testing only scratches the surface: contamination events are often detected after distribution, when recalls and consumer illness reports already occur. The question is no longer if a supply chain will face viral threats — but when.

In this session:

Martin D’Agostino (Virosafety) will detail the main viral hazards, the commodities most at risk, and the limitations of current detection strategies.

Asli Solmaz-Kaiser (iComplai) will show how AI can scan thousands of global signals — from recalls to academic publications — to provide early warning on emerging risks before products are compromised.

The aim is practical: giving food safety professionals the tools to anticipate viral threats earlier, integrate predictive insights into existing HACCP systems, and strengthen supply chain resilience.

Asli Solmaz-Kaiser | iComplai

Asli Solmaz-Kaiser is the CEO of iComplai, the early warning system for risks in the food supply chain. Asli has 14 years of experience in the product safety industry and has acted as a member of the German national product safety committee. Prior to this role Asli has been leading the global product development and innovation team of one of the leading testing, inspection and certification companies in Germany. Asli holds a masters degree in business from the University of Mannheim.

Martin D'agostino

Martin is a virologist with an emphasis on meeting the challenges posed by enteric viruses in the food supply chain; principally Norovirus, Hepatitis A virus and Hepatitis E virus. He has acted as lead bid writer and co-ordinator on collaborative ventures for major funders such as the Food Standards Agency and European Framework projects He has set up the virology laboratories at both CampdenBRI and Fera Science.
